If there is no father, the mother can hold the child or a close relative (aunt, grandparent, older sister, etc.). I don't know if it make too much difference as long as the purpose is accomplished, which is to make a public acknowledgement that we all need help from the Lord and others in raising the children God places temporarily in our hands.
